Yoghurt Jelly

This is not a fancy dessert, but my goodness it’s yummy. My nana used to make it, so all the measurements are rough and ready. Basically you make a packet of jelly following the instructions on it, but using only about half the water. Then when the mixture has cooled a bit, but before it starts to set, you whisk in the yoghurt (natural, unsweetened & I prefer low fat). I added two very generously heaped dessert spoonfuls, which is maybe a third to half a cup. You’ll notice I didn’t wait for the mixture to cool enough, so it went a bit bitty.

So I whisked like crazy…

And the result, once set, is tangy, sweet, cool delight.

However, Nana’s dessert has some fierce competition. I’ve discovered Gelativo Coffee Gelato. I think I’ve died and gone to heaven – I knew heaven was coffee-flavoured 😉

  1. I am saving this to fix for when my mother comes to visit in January. This is exactly the kind of dessert she loves. And she's picky, so I'm always looking for something I can fix that I know she'll eat. Thank you!
